Lben, a refreshing Moroccan buttermilk, is a staple in many homes, especially during the sweltering summer months. It finds its place at the table alongside couscous bel lben, offering a cooling contrast to the warm, hearty grains. In the heat of summer, it’s often enjoyed on its own, sometimes sweetened with a touch of sugar.

This drink is not to be confused with yogurt; instead, it offers a tangy, thin consistency akin to farmhouse kefir. Served ice-cold, its invigorating tartness is beautifully balanced by a subtle saltiness, making it an ideal thirst-quencher. Whether paired with couscous or sipped solo, it’s a simple pleasure that speaks volumes in its quiet refreshment.

Ingredients

  • 500 mililitrosyogur natural
  • 400 mililitrosagua fría
  • pizcasal
  • 1 tazahielo — opcional

Method

  1. En un tazón grande, vierte 500 mililitros de yogur natural. Usa un batidor para batir vigorosamente el yogur hasta que quede completamente suave y sin grumos. Este paso asegura que la textura final del Lben sea sedosa y consistente.
  2. Agrega gradualmente 400 mililitros de agua fría al yogur batido. Continúa batiendo mientras viertes el agua en un chorro constante. La mezcla debe volverse más delgada y fluida, asemejándose a la consistencia de un lassi bebible. Este paso es crucial para lograr la delgadez deseada del Lben.
  3. Añade una pizca de sal a la mezcla y bate nuevamente para combinar. Si prefieres una versión dulce, puedes sustituir la sal con una pequeña cantidad de azúcar. La sal o el azúcar deben disolverse completamente, realzando el perfil de sabor del Lben.
  4. Prepara una jarra grande y llénala con 1 taza de hielo. Vierte la mezcla de yogur sobre el hielo, permitiendo que se enfríe inmediatamente. El hielo ayudará a enfriar rápidamente el Lben, haciéndolo refrescante y listo para servir.
  5. Una vez que el Lben esté completamente frío y el hielo se haya derretido ligeramente, dándole una frescura crujiente, viértelo en vasos.
