Ingredients

  • 900 gramosbistecs de solomillo de res — cortados en tiras finas
  • 3cebollas blancas — cortadas en rodajas finas
  • 4 dientesajo — picados
  • 3 cucharadasjugo de lima
  • 2 cucharadassalsa inglesa
  • 3 cucharadasaceite neutro
  • 3 tazasarroz rojo — para servir
  • 1 cucharaditasal fina
  • 18tortillas de maíz — calentadas en el comal

Method

  1. Comience cortando los 900 gramos de bistecs de solomillo de res en tiras finas, de aproximadamente 1/2 cm de grosor, cortando en contra de la fibra. Esto asegura que la carne se mantenga tierna. Sazone bien la carne con 1 cucharadita de sal fina y déjela reposar unos minutos para que absorba el condimento.
  2. Caliente una cazuela grande de fondo grueso a fuego alto hasta que esté muy caliente. Agregue 1 cucharada del aceite neutro y gire para cubrir la cazuela. Selle la carne en tandas, asegurándose de no llenar demasiado la cazuela. Cocine cada tanda hasta que la carne esté dorada por fuera, aproximadamente 2-3 minutos por lado, luego retire y reserve. Repita con el resto de la carne, agregando más aceite según sea necesario.
  3. Pele y corte las 3 cebollas blancas en aros finos. En la misma cazuela, agregue el aceite restante si es necesario y reduzca el fuego a medio. Agregue las cebollas y cocine, revolviendo ocasionalmente, hasta que se ablanden y comiencen a caramelizarse, recogiendo los trozos dorados de la cazuela, aproximadamente 8-10 minutos.
  4. Pique 4 dientes de ajo y agréguelos a las cebollas, cocinando por otro minuto hasta que estén fragantes. Vierta 2 cucharadas de salsa inglesa y 3 cucharadas de jugo de lima, revolviendo para combinar y raspando cualquier trozo restante del fondo de la cazuela.
  5. Regrese la carne sellada y cualquier jugo acumulado a la cazuela con las cebollas y el ajo. Revuelva todo junto y deje que hierva a fuego lento durante unos 5 minutos, justo hasta que la carne esté caliente y los sabores se mezclen. La salsa debe cubrir ligeramente la carne y las cebollas.
  6. Termine el plato ajustando el condimento si es necesario y agregando un poco de cilantro fresco si lo desea. Sirva el Bistec Encebollado caliente con 3 tazas de arroz rojo y 18 tortillas de maíz calientes al lado, permitiendo que todos hagan sus propios tacos en la mesa.
