Host a French night

Two tables: a Sunday braise, and a cider-and-crêpe night.

A French house does not serve coq au vin and a stack of crêpes as one buffet. The pot is Sunday. The pan is Brittany on a weeknight.

Sunday cocotte

Coq au vin or bourguignon, bread, salad after. No crêpes.

Brown the bird or the beef, add wine and stock, lid on. The cocotte comes to the table. Bread wipes the sauce. A green salad with vinaigrette follows, on clean plates.

Do not serve ratatouille under the meat as a mush. Do not open with crêpes.

  1. Afternoon: brown, deglaze, simmer.
  2. Rest the pot.
  3. Table: bread, then salad, then coffee.

Galettes complète, then sweet if you want. The cocotte stays on the shelf.

Buckwheat or wheat batter, a hot thin pan, ham and cheese and an egg. Dry cider in bowls. That is dinner.

Do not also roast a coq. Ratatouille is another lunch.
