Classic Hummus finds its roots in the rich culinary traditions of the Levant, where it graces mezze tables alongside a variety of small dishes. Ingredients

  • 4 tbsptahini
  • 2 clovesgarlic
  • 60 mllemon juice
  • 3 tbspextra virgin olive oil

Method

  1. Begin by placing 400 g of cooked chickpeas into a food processor or a large mixing bowl if you prefer to mash by hand. Add 4 tbsp of tahini to the chickpeas. Blend or mash the mixture until it reaches a smooth, creamy consistency. If using a food processor, pause occasionally to scrape down the sides to ensure even blending.
  2. Peel and finely chop 2 cloves of garlic. With the processor running, or while mashing, gradually incorporate the chopped garlic, 60 ml of lemon juice, and 3 tbsp of extra virgin olive oil into the chickpea and tahini mixture. This slow addition helps the flavors meld and creates a silky texture. Continue until the mixture is smooth and well combined.
  3. Taste the hummus and add fine sea salt to your liking. To ensure the seasoning is balanced, taste the hummus with a piece of bread or a vegetable stick, as this mimics how it will be eaten. Adjust the salt as necessary, keeping in mind that flavors will deepen as the hummus rests.
  4. Allow the hummus to rest for at least 10 minutes at room temperature. This brief resting period allows the flavors to meld further and the texture to settle into a creamy consistency. Before serving, transfer the hummus to a serving bowl.
  5. To finish, create a small well in the center of the hummus and drizzle a little extra virgin olive oil over the top. Sprinkle a pinch of paprika for a touch of color and a hint of spice. Serve cool, allowing the flavors to shine as part of a Mediterranean meal.
