Homus Brasileiro

Homus Brasileiro is a modern twist on the classic Middle Eastern hummus, adapted for Brazilian tastes and gatherings. It's a dish that embodies the casual elegance of Brazilian family meals, where each element is added intuitively. The chickpeas are blended to a creamy consistency, while lime juice brings a bright, zesty note that balances the richness of the tahini. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • limejuiced
  • 2 clovesgarlic
  • to tastefine sea salt

Method

  1. Begin by soaking 400 g of chickpeas in a large bowl of water overnight, ensuring they are fully submerged. This will soften them and make them easier to blend later. Drain and rinse the chickpeas thoroughly before cooking.
  2. Transfer the soaked chickpeas to a large pot and cover with fresh water. Bring to a boil over high heat, then reduce to a simmer. Cook until the chickpeas are tender and can be easily mashed between your fingers, which usually takes about 1 to 1.5 hours. Drain and allow them to cool slightly.
  3. In a blender or food processor, combine the cooked chickpeas with 2 tbsp of tahini. Blend until you achieve a smooth, creamy consistency. If the mixture is too thick, add a tablespoon of water at a time and blend again until the desired texture is reached.
  4. Slowly incorporate the juice of one lime into the blended chickpea mixture. This adds a bright acidity that balances the richness of the tahini. Blend until the lime juice is fully integrated and the mixture is smooth.
  5. Peel and finely chop 2 cloves of garlic. Add the garlic and a generous pinch of fine sea salt to the mixture. Blend again, then taste by spreading a small amount on a piece of bread. Adjust the salt to your liking, keeping in mind that the flavors will meld as the homus rests.
  6. Once seasoned to your preference, transfer the homus to a serving bowl. Allow it to rest at room temperature for about 15 minutes to let the flavors develop. Serve the homus cool, with a drizzle of olive oil on top if desired, and enjoy with bread or fresh vegetables.
