Peruvian Chickpea Dip 3 brings the comforting flavors of Peruvian home cooking to your table. The dip features chickpeas as its star, enhanced by the nutty depth of tahini and the bright acidity of freshly squeezed lemon juice. Garlic and cumin add layers of flavor, while fine sea salt is adjusted to personal preference, making each batch unique. This is a dish meant for sharing, inviting everyone to gather around and enjoy its simple yet delightful taste.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by draining and rinsing the 400 g of chickpeas thoroughly under cold water to remove any excess brine. Transfer the chickpeas to a food processor or a large mortar and pestle. Blend or pound the chickpeas until they form a coarse paste, ensuring there are no whole chickpeas left. The texture should be slightly chunky but cohesive.
  2. Add 2 tbsp of tahini to the chickpea paste. Slowly incorporate the juice of one lemon, blending or stirring continuously to achieve a smooth consistency. The mixture should become creamy and slightly lighter in color as the tahini and lemon juice emulsify with the chickpeas.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the chickpea mixture along with 1 tsp of cumin. Blend or stir the mixture until the garlic and cumin are evenly distributed, infusing the dip with their aromatic flavors.
  4. Season the dip with fine sea salt to taste. Start with a small amount, tasting on a piece of bread to gauge the seasoning. Adjust the salt gradually, ensuring the flavors are balanced and the garlic does not overpower the chickpeas.
  5. Allow the dip to rest for about 10 minutes to let the flavors meld. During this time, the dip will cool slightly and the garlic will mellow. Serve the Peruvian Chickpea Dip 3 cool, accompanied by bread or as part of a shared table spread.
