Peruvian Chickpea Dip

Born from the simplicity of daily cooking, it embraces the natural rhythm of the home kitchen. The chickpeas, often a pantry staple, are transformed with a generous hand of salt and a liberal touch of fat, mirroring the way Peruvian home cooks have done for generations. It's a dish that speaks to the everyday, written down as it is made, without flourish or pretense.

The dip is a smooth blend with the earthy depth of chickpeas, elevated by the nutty richness of tahini and the bright acidity of fresh lemon juice. A whisper of cumin and the warmth of garlic round out its flavors, creating a harmonious balance that is as comforting as it is satisfying. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by draining and rinsing 400 g of chickpeas thoroughly under cold water to remove any excess salt and preserve their natural flavor. Place the chickpeas in a food processor or a large mortar and pestle. Blend or pound them until they reach a coarse, grainy texture, ensuring there are no whole chickpeas left. This texture will give the dip its characteristic rustic feel.
  2. Add 2 tablespoons of tahini to the chickpeas. Slowly incorporate the juice of one lemon, allowing the acidity to balance the richness of the tahini. Blend or mix until the mixture becomes smoother, but still retains some texture. The lemon juice should enhance the aroma and slightly lighten the color of the mixture.
  3. Peel and finely mince 2 cloves of garlic. Add them to the chickpea mixture along with 1 teaspoon of cumin. Blend or mix again, ensuring the garlic is evenly distributed throughout the dip. The cumin will add a warm, earthy aroma, while the garlic should be present but not overpowering.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, then blend and taste the dip on a piece of bread. Adjust the salt gradually, as the bread will help you gauge the seasoning needed for the final dish. The flavor should be balanced, with the salt enhancing the natural nuttiness of the chickpeas.
  5. Allow the dip to rest for at least 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, ideally with fresh bread or vegetables for dipping, and enjoy the communal spirit of a Peruvian table.
