Indian Chicken Roast

Indian Chicken Roast is a cherished dish often prepared in home kitchens across India. It's a comforting meal that brings families together, usually enjoyed on leisurely weekends or special occasions. This home-style version captures the essence of traditional cooking, where ingredients are measured by intuition and the cook's seasoned hand.

The roast features a whole chicken, generously seasoned with paprika, fine sea salt, and black pepper, creating a harmonious blend of flavors. Roasted potatoes accompany the bird, absorbing the rich juices and spices. A squeeze of fresh lemon adds a bright finish, elevating the dish to a delightful balance of warmth and zest, perfect for sharing and savoring.

Ingredients

Method

  1. Pat the chicken dry using paper towels to remove excess moisture, ensuring a crispier skin. Season the entire chicken generously with fine sea salt, black pepper, and 1 tsp paprika, rubbing the spices into the skin and cavity for even flavor distribution. In a large, heavy-bottomed pan or Dutch oven, heat 2 tbsp oil over medium-high heat. Once the oil is shimmering, carefully place the chicken in the pan, breast side down, and brown for about 5-7 minutes until the skin is a deep golden color. Flip the chicken to brown the other side, ensuring even color all around.
  2. While the chicken is browning, peel and cut the 1 kg potatoes into large chunks, approximately 2 inches each. Once the chicken is browned, remove it from the pan and set aside momentarily. Add the potato chunks to the same pan, stirring them in the remaining oil and chicken drippings. Cook the potatoes for about 5 minutes, stirring occasionally, until they start to develop a golden crust.
  3. Return the chicken to the pan, nestling it among the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, then place the squeezed lemon halves in the pan for added aroma. Cover the pan with a lid or foil, reducing the heat to medium-low. Allow the chicken and potatoes to cook together, turning the chicken occasionally, until the chicken is cooked through and the potatoes are tender. The chicken is done when the juices run clear when pierced at the thickest part of the thigh.
  4. Once the chicken is cooked, remove it from the pan and let it rest on a cutting board. Increase the heat to medium and check the consistency of the sauce in the pan. If it's too thin, let it simmer uncovered for a few minutes to thicken slightly. Taste the sauce and adjust the seasoning with more salt and pepper if necessary.
  5. Carve the rested chicken into serving pieces and arrange them on a platter with the roasted potatoes. Pour the reduced sauce over the chicken and potatoes for added flavor. Garnish with freshly chopped herbs of your choice, such as cilantro or mint, to add a fresh, vibrant note. Serve the Indian Chicken Roast family-style, inviting everyone to share in this comforting dish.
