Ingredients

Method

  1. Begin by washing and drying 1 eggplant, 2 zucchini, and 2 tomatoes. Cut the eggplant and zucchini into 1/4-inch thick slices, and the tomatoes into slightly thicker slices to hold their shape during baking. Arrange the slices in a single layer on a large tray and sprinkle them lightly with fine sea salt, allowing them to sit for about 10 minutes. This helps to draw out excess moisture and reduces bitterness, especially from the eggplant.
  2. In a large skillet, heat 80 ml of olive oil over medium heat. Add finely chopped onion and sauté until the onion becomes translucent and soft, which should take about 5-7 minutes. This slow cooking of the onion forms the flavorful base of the dish, allowing the natural sweetness to develop.
  3. Once the onion is ready, add the eggplant slices to the skillet. Cook them gently, turning occasionally, until they begin to soften and absorb some of the oil, about 5 minutes. The eggplant should start to turn golden brown and become tender.
  4. Add the zucchini slices to the skillet with the eggplant and onions. Stir gently to combine, ensuring that the zucchini is coated with the oil and onion mixture. Cook for an additional 5 minutes until the zucchini is slightly softened but still retains some bite.
  5. Layer the tomato slices over the eggplant and zucchini mixture. Sprinkle with your choice of herbs, such as fresh cilantro or dried oregano, and a bit more fine sea salt and black pepper to taste. Cover the skillet with a lid and let it cook on low heat for about 5 minutes until the tomatoes are just tender and the flavors meld together.
  6. Remove the lid and check the texture of the vegetables. The eggplant should be creamy, the zucchini tender yet firm, and the tomatoes should have softened slightly, releasing their juices to create a light sauce. Adjust seasoning with more salt and pepper if needed.
  7. Transfer the Indian Vegetable Bake to a serving dish, ensuring to include the flavorful juices from the skillet. Serve immediately, allowing the vibrant colors and aromatic herbs to invite everyone to the table for a shared meal.
