- While the vegetables rest, finely chop one medium onion. Heat 40 ml of olive oil in a large skillet over medium heat. Add the chopped onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, releasing its sweet aroma. This should take about 5 to 7 minutes, and it's crucial for building the base flavor of the dish.
- Pat the vegetables dry with a paper towel to remove the moisture drawn out by the salt. In a large baking dish, start layering the vegetable slices.
