Ingredients

  • 2pork knuckles — skin scored
  • 500 mldark beer
  • 2onions — quartered
  • 4 clovesgarlic
  • 1 tspcaraway seeds
  • 2bay leaves
  • 2 tbspclarified butter
  • to tastecoarse sea salt

Method

  1. Pat the pork knuckles dry with paper towels to ensure a good sear. Generously season them with coarse sea salt and 1 teaspoon of caraway seeds, pressing the seasoning into the skin and flesh. This step helps to flavor the meat and prepare the skin for crisping later.
  2. In a large, heavy-bottomed pan or Dutch oven, heat 2 tablespoons of clarified butter over medium-high heat until it shimmers. Place the seasoned pork knuckles in the pan and brown them on all sides. This should take about 10 minutes, and you should see a deep golden crust forming on the skin, which will contribute to the final texture and flavor.
  3. Preheat your oven to 180°C (355°F). Slice 2 onions and crush 4 cloves of garlic, then add them to the pan with the browned pork knuckles. Add 2 bay leaves and pour in 500 ml of dark beer, ensuring the liquid comes halfway up the sides of the knuckles. The beer will infuse the meat with a rich, malty flavor as it roasts.
  4. Transfer the pan to the preheated oven. Roast the pork knuckles uncovered, basting them every 30 minutes with the pan juices. This helps to keep the meat moist and encourages the skin to crisp. Continue roasting until the meat is tender and the skin is beginning to crisp, which should take about 2 to 2.5 hours. You’ll know it’s ready when the meat pulls away from the bone easily.
  5. Increase the oven temperature to 220°C (430°F) for the final 15 to 20 minutes of cooking. This high heat will blister the skin, creating a crackling that is crunchy and shatters easily. Watch closely to ensure the skin doesn’t burn, adjusting the position of the pan if necessary.
  6. Once the skin is perfectly crispy, remove the pan from the oven and let the pork knuckles rest for about 10 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring each bite is juicy and flavorful.
  7. Serve the Schweinshaxe with traditional accompaniments like Sauerkraut, Semmelknödel, and a dollop of sharp mustard. The combination of flavors and textures will provide a classic Bavarian experience.
