Vegetable Couscous Bowl

Ingredients

  • 1red pepper
  • 200 gchickpeas
  • 60 mlextra virgin olive oil

Method

  1. Begin by preparing the vegetables. Peel and dice the sweet potato into 1 cm cubes. Slice the zucchini into half-moons about 1 cm thick, and chop the red pepper into bite-sized pieces. Rinse and drain the chickpeas thoroughly. Season the vegetables and chickpeas with a sprinkle of fine sea salt and a dash of harissa or cumin, depending on your preference for spice.
  2. In a large saucepan, heat 30 ml of extra virgin olive oil over medium heat. Add the sweet potato cubes first, as they take longer to cook. Stir occasionally until they start to soften and develop a slight golden color, about 5-7 minutes. Then, add the zucchini and red pepper, continuing to cook until all the vegetables are tender and fragrant, another 5 minutes. The vegetables should be soft but not mushy, with a pleasant aroma.
  3. While the vegetables are cooking, prepare the couscous. In a separate pot, bring 300 ml of water to a boil. Stir in the couscous, remove the pot from the heat, cover, and let it sit for about 5 minutes. Fluff the couscous with a fork once all the water is absorbed and the grains are tender.
  4. Add the chickpeas to the saucepan with the vegetables, stirring to combine. Cook for an additional 2-3 minutes until the chickpeas are heated through and the flavors meld together. The mixture should be well-integrated, with the chickpeas taking on some of the color and flavor of the spices.
  5. Combine the cooked couscous with the vegetable and chickpea mixture in the saucepan. Drizzle the remaining 30 ml of olive oil over the top and gently toss everything together until well mixed. The couscous should be evenly coated with oil and spices, and the vegetables should be distributed throughout.
  6. Taste the couscous bowl and adjust the seasoning with more fine sea salt if needed. Serve the dish warm, garnished with a squeeze of fresh lemon juice to brighten the flavors. Optionally, add a sprinkle of fresh herbs like parsley or mint for an extra layer of freshness.
