Orange, Onion and Olive Salad

Serves 4 Salad vegetarian, Salads

Orange, Onion and Olive Salad

This vibrant salad, a staple of Moroccan winter tables, pairs perfectly with grilled fish. The combination of sweet oranges, sharp red onions, and salty purple olives creates a dish that stands out during the cooler months. While cinnamon is a traditional, albeit contentious, addition, it can be replaced with cumin to suit individual tastes.

Expect each bite to deliver a refreshing contrast of flavors and textures. The juicy oranges mingle with the crisp onion slices, while the olives add a briny depth. A drizzle of olive oil ties everything together, with a final pinch of salt enhancing the vivid taste profile. This salad is a celebration of simplicity and balance on the plate.

Ingredients

  • 3oranges, peeled and sliced
  • 1red onion, thinly sliced
  • 16purple olives
  • 3 tbspolive oil
  • 1 tspcumin or cinnamon
  • pinchsalt

Method

  1. Start by arranging the orange slices on a large, flat serving platter. Ensure the slices are evenly distributed, slightly overlapping each other, to create a vibrant base for the salad.
  2. Scatter the thinly sliced red onion over the oranges. Try to distribute the onion evenly to ensure every bite has a balance of sweet and sharp flavors.
  3. Add the purple olives by placing them strategically around the platter. This will not only add a pop of color but also ensure that each serving has a few olives for that salty contrast.
  4. In a small bowl, combine 3 tablespoons of olive oil with 1 teaspoon of cumin or cinnamon, depending on your preference. Whisk together until the oil is well infused with the spice.
  5. Drizzle the spiced olive oil mixture evenly over the salad. Make sure each component of the salad is lightly coated to enhance the flavors.
  6. Sprinkle a pinch of salt over the entire salad. This will help to bring out the natural sweetness of the oranges and balance the flavors.
  7. Allow the salad to stand at room temperature for 10 minutes before serving. This resting time lets the flavors meld together, creating a harmonious taste experience.
