  2. Select a variety of fresh herbs such as cilantro, parsley, and mint, and rinse them under cold water. Pat them dry and then roughly chop them, aiming for about a handful of each. The herbs should be fragrant and vibrant, adding a fresh aroma to the salad.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until they are emulsified, creating a smooth and slightly thickened dressing. This mixture will provide a bright and tangy flavor to the salad.
