Taktouka hails from the northern regions of Morocco, offering a vibrant contrast to its southern cousin, zaalouk. This cooked salad is a staple during summer months, when the markets burst with fresh green peppers and tomatoes. It's a dish that graces the table at lunchtime, often served with warm khobz to scoop up its luscious texture.

The essence of Taktouka lies in its silky consistency, achieved by simmering green bell peppers and ripe tomatoes until they meld into a harmonious blend. The gentle warmth of cumin and the subtle bite of garlic infuse every bite, while a drizzle of olive oil ties it all together, creating a dish that's both comforting and refreshing.

Ingredients

  • 4green bell peppers
  • 4tomatoes
  • 3garlic cloves
  • 1 tspcumin
  • 3 tbspolive oil
  • 1 tspsalt

Method

  1. Begin by charring the 4 green bell peppers. Place them directly over a gas flame or under a broiler, turning occasionally, until the skin is blackened and blistered all over. This step adds a smoky flavor to the peppers, which is essential for Taktouka. Once charred, place the peppers in a bowl and cover with a plate or plastic wrap to steam for about 10 minutes, which will make peeling easier.
  2. While the peppers are steaming, prepare the tomatoes. Grate 4 tomatoes using the large holes of a box grater, discarding the skins. This method ensures a smooth texture and allows the tomatoes to blend seamlessly into the dish.
  3. Once the peppers have cooled, peel off the charred skin using your fingers. It should come off easily after steaming. Remove the seeds and stems, then slice the peppers into thin strips. Set aside for later use.
  4. In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 3 finely chopped garlic cloves and sauté until they become fragrant and just start to turn golden, about 1 to 2 minutes. This step infuses the oil with garlic flavor, which will permeate the entire dish.
  5. Add the grated tomatoes to the skillet along with 1 teaspoon of cumin. Stir to combine, and cook the mixture, allowing it to reduce. You'll know it's ready when the tomatoes have thickened and the mixture has a rich, deep red color, which should take about 10 minutes.
  6. Add the sliced peppers to the tomato mixture in the skillet. Stir well to combine all the ingredients. Continue to cook over medium heat until the oil begins to rise to the surface, indicating that the moisture has evaporated and the flavors have concentrated. This should take about 5 to 7 minutes.
  7. Finally, season the Taktouka with 1 teaspoon of salt, stirring to ensure it's evenly distributed. Taste and adjust the seasoning if necessary. Serve warm or at room temperature, allowing the flavors to meld into a silky, cohesive salad.
