Misir Alicha Side is a staple in Ethiopian fasting kitchens, where it provides a hearty and comforting meal during times of abstinence from animal products. The dish's foundation of red lentils and aromatic spices makes it a beloved part of day-to-day cooking. Ingredients

  • 1 1/2 cupsred lentils — rinsed
  • 1yellow onion — finely chopped
  • 3 clovesgarlic — minced
  • 1 tbspfresh ginger — minced
  • 1 tspground turmeric
  • 3 tbspoil
  • 4 cupswater
  • 1 tspfine salt

Method

  1. Start by preparing your vegetables. Finely chop 1 yellow onion and mince 3 cloves of garlic. Grate 1 tablespoon of fresh ginger. This will ensure that all the aromatics cook evenly and infuse the dish with their flavors.
  2. In a medium-sized pot, heat 3 tablespoons of oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft. This should take about 5 minutes, and the onion will release a sweet aroma.
  3. Add the minced garlic and grated ginger to the pot with the onions. Stir continuously for about 1 minute, until the garlic and ginger become fragrant. This step releases their essential oils, enhancing the dish's flavor.
  4. Stir in 1 teaspoon of ground turmeric, ensuring that it coats the onion, garlic, and ginger mixture evenly. The turmeric will give the dish its characteristic golden color and earthy aroma.
  5. Add 1 1/2 cups of red lentils to the pot, stirring to coat them with the turmeric and aromatics. This helps the lentils absorb the flavors from the beginning of the cooking process.
  6. Pour in 4 cups of water and 1 teaspoon of fine salt. Stir to combine, then increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to low and cover the pot.
  7. Allow the lentils to cook gently, stirring occasionally, until they are tender but still hold their shape. This should take about 20-25 minutes. The lentils should be soft and creamy, with a slight bite to them.
  8. Once the lentils are cooked to your desired texture, taste and adjust the seasoning if necessary. Serve the Misir Alicha warm on an injera platter, letting its inviting aroma draw everyone to the table.
