The carrots, sweet and tender, are elevated by the warmth of cumin and a drizzle of extra virgin olive oil. Greek yogurt adds a creamy tang, while fresh herbs and a squeeze of lemon brighten each bite. The simple seasoning of fine sea salt ensures every flavor sings.

Ingredients

Method

  1. Preheat your oven to 200°C (390°F). Peel and cut 800 g of carrots into uniform sticks, about the size of your little finger. This ensures they cook evenly and become tender at the same rate.
  2. In a large bowl, toss the carrot sticks with 60 ml of extra virgin olive oil, making sure each piece is well-coated. This will help them roast evenly and develop a nice caramelized exterior.
  3. Spread the carrots in a single layer on a baking sheet. Place them in the preheated oven and roast for about 25-30 minutes, stirring halfway through. You'll know they're ready when they are tender and have a slight golden-brown color on the edges.
  4. While the carrots are roasting, prepare the yogurt sauce. In a small bowl, mix 200 g of Greek yogurt with 1 teaspoon of cumin and a pinch of fine sea salt. Stir until smooth and set aside for the flavors to meld.
  5. Once the carrots are done roasting, transfer them to a serving platter. Squeeze the juice of half a lemon over the hot carrots and sprinkle with a pinch more of fine sea salt to enhance their natural sweetness.
  6. Chop a handful of fresh herbs such as parsley, cilantro, or mint. Scatter them generously over the carrots, adding a fresh, aromatic finish.
  7. Serve the roasted carrots warm, with the yogurt sauce on the side or drizzled on top. The contrast between the creamy yogurt and the sweet, caramelized carrots makes for a delightful Mediterranean dish.
