The dish is a comforting blend of tender cabbage, potatoes, and carrots, all infused with the earthy warmth of turmeric and the bright notes of ginger and garlic. Tikil Gomen is best enjoyed with injera, the spongy flatbread that serves as both a utensil and a canvas for savoring every bite.

Ingredients

  • 1 headgreen cabbage — coarsely chopped
  • 4potatoes — peeled and cut into chunks
  • 3carrots — sliced on the diagonal
  • 1yellow onion — sliced
  • 3 clovesgarlic — minced
  • 1 tbspfresh ginger — minced
  • 1 tspground turmeric
  • 3 tbspoil
  • 1 tspfine salt

Method

  1. Start by preparing your vegetables. Remove the outer leaves of the cabbage, then cut it into quarters and remove the core. Slice each quarter into strips about 1/2 inch wide. Peel the potatoes and cut them into 1-inch cubes. Peel the carrots and slice them into 1/4-inch rounds. Dice the yellow onion finely, and mince the garlic and fresh ginger.
  2. In a large, heavy-bottomed pot, heat 3 tablespoons of oil over medium heat. Add the diced onion and cook, stirring occasionally, until it becomes translucent and soft, about 5 minutes. This step is crucial as it forms the base flavor for the dish. Add the minced garlic and ginger, stirring for another minute until their aroma is released.
  3. Sprinkle in 1 teaspoon of ground turmeric, stirring to coat the onions, garlic, and ginger evenly. The turmeric will give the dish its characteristic golden color and earthy flavor. Add the sliced cabbage, potato cubes, and carrot rounds to the pot. Stir well to ensure all the vegetables are coated with the turmeric mixture.
  4. Pour in a splash of water, about 1/4 cup, to create steam and prevent sticking. Cover the pot with a lid and reduce the heat to low. Allow the vegetables to cook gently, stirring occasionally, until they are tender but still holding their shape. The cabbage should be soft, and the potatoes should be easily pierced with a fork but not falling apart.
  5. Once the vegetables are cooked to the desired tenderness, season the dish with 1 teaspoon of fine salt, stirring to distribute evenly. Taste and adjust the seasoning if necessary. Serve the Tikil Gomen warm, traditionally on an injera platter, alongside other Ethiopian dishes. The vibrant color and fragrant aroma will invite everyone to the table.
