Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. In a large, heavy-bottomed pot, heat 1 tablespoon of olive oil over medium heat. Once the oil shimmers, add the chopped onion and garlic. Stir frequently, allowing them to soften until the onion becomes translucent and the garlic releases its aroma, taking care not to let them brown.
  2. Sprinkle in 1 teaspoon of cumin, stirring to coat the onions and garlic evenly. The cumin should release a warm, earthy fragrance, enhancing the base of your dish. This step is crucial for building depth of flavor, so ensure the spices are well incorporated.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the lentils to the pot, stirring to combine them with the aromatic base. This helps the lentils absorb the flavors from the onions, garlic, and cumin.
  4. Pour in 1.5 L of water, stirring to ensure the lentils are evenly distributed. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pot, allowing it to simmer. Stir occasionally, checking that the lentils are cooking evenly and not sticking to the bottom.
  5. Simmer the lentils until they become tender and begin to break down, creating a creamy texture. This should result in a thick, hearty consistency, with the lentils soft enough to mash easily against the side of the pot.
  6. Season the lentil pot with fine sea salt and black pepper to taste. Squeeze the juice of 1 lemon over the dish, stirring to incorporate the citrus brightness throughout. This final touch balances the flavors, adding a fresh, tangy note to the rich, earthy lentils.
