Tajine de Garbanzos

Chickpea Tagine, a staple of Moroccan home cooking, brings warmth and comfort to the table with its rich flavors and hearty texture. This meatless tagine stands proudly on its own, proving that simplicity can be both filling and delightful.

Ingredients

  • 500 gramosgarbanzos cocidos
  • 2cebollas
  • 1 cucharaditajengibre
  • 1 cucharaditacúrcuma
  • 1limón confitado — opcional
  • 3 cucharadasaceite de oliva
  • 1 cucharaditasal
  • 1 puñadocilantro, picado

Method

  1. Comience pelando y cortando finamente las 2 cebollas. En una olla grande de fondo grueso o tajine, caliente 3 cucharadas de aceite de oliva a fuego medio. Agregue las cebollas cortadas a la olla, revolviendo para cubrirlas uniformemente con el aceite. Espolvoree 1 cucharadita de jengibre y 1 cucharadita de cúrcuma, y añada 1 cucharadita de sal. Cocine las cebollas lentamente, revolviendo ocasionalmente, hasta que se vuelvan suaves y translúcidas, y su dulzura natural se libere, aproximadamente 10-15 minutos.
  2. Una vez que las cebollas estén dulces y tiernas, agregue 500 gramos de garbanzos cocidos a la olla. Revuelva los garbanzos suavemente para combinarlos con la mezcla de cebolla. Vierta suficiente agua para cubrir parcialmente los garbanzos, aproximadamente 1/2 taza. Lleve la mezcla a fuego lento, permitiendo que los sabores se mezclen. Continúe cocinando a fuego lento durante unos 20 minutos, revolviendo ocasionalmente, hasta que los garbanzos estén completamente calientes y la salsa se haya espesado ligeramente.
  3. Mientras los garbanzos se cocinan a fuego lento, prepare el limón confitado enjuagándolo para eliminar el exceso de sal y luego picándolo en trozos pequeños, desechando las semillas. Después de que los garbanzos hayan cocido a fuego lento, agregue el limón confitado picado a la olla.   4. Termine el plato añadiendo un puñado de cilantro picado, revolviéndolo en el tajine justo antes de servir.
