Tajine de Gombo

This Okra Tagine, or Tajine de Gombo, is a staple in the Moroccan summer kitchen, where the abundance of fresh produce is celebrated. Originating from regions where the sun ripens the pods to perfection, this dish makes its appearance when the markets are brimming with young, tender okra. The key lies in maintaining the integrity of the pods, ensuring they remain whole and firm as they simmer gently in a fragrant tomato base.

The result is a dish that balances the earthy notes of cumin and paprika with the brightness of fresh cilantro and a squeeze of lemon. The sauce becomes rich and thick, enveloping the okra without turning it mushy, offering a satisfying bite with each mouthful. Serve it hot, with warm khobz to sop up the sauce, letting each bite tell the story of sun-drenched fields and fragrant spice markets.

Ingredients

  • 600 gramosgombo pequeño, recortado
  • 4tomates, rallados
  • 4dientes de ajo
  • 1 cucharaditacomino
  • 1 cucharaditapimentón
  • 4 cucharadasaceite de oliva
  • 1 manojocilantro, picado
  • 1limón
  • 1 cucharaditasal

Method

  1. Comienza mezclando los 600 gramos de gombo pequeño recortado con 1 cucharadita de sal en un bol. Esto ayuda a extraer algo de la humedad y realza el sabor del gombo.
  2. Calienta 4 cucharadas de aceite de oliva en una cazuela grande de fondo grueso o tajine a fuego medio-alto. Una vez que el aceite esté brillante, añade el gombo salado en una sola capa. Dora el gombo, volteándolo ocasionalmente, hasta que los bordes adquieran un color dorado, lo que debería tomar unos 5 a 7 minutos. Este paso ayuda a fijar el sabor del gombo y evita que se vuelva baboso.
  3. Reduce el fuego a medio y añade 4 tomates rallados a la cazuela. Incorpora 4 dientes de ajo picados, 1 cucharadita de comino, 1 cucharadita de pimentón y una cucharadita adicional de sal. Mezcla bien todo para asegurar que las especias cubran uniformemente el gombo y los tomates.
  4. Cocina la mezcla sin tapar, permitiendo que los tomates liberen sus jugos y la salsa se espese. Remueve ocasionalmente y deja que hierva a fuego lento durante unos 20 minutos. Sabrás que está listo cuando la salsa se haya reducido y espesado, y las vainas de gombo estén tiernas pero aún mantengan su forma.
  5. Una vez que la salsa haya alcanzado la consistencia deseada, retira la cazuela del fuego. Incorpora un manojo de cilantro picado y el jugo de 1 limón. El cilantro añade una nota fresca y herbal, mientras que el jugo de limón realza los sabores del plato.
  6. Sirve el Tajine de Gombo caliente, acompañado de pan crujiente para absorber la rica y sabrosa salsa. Disfruta del equilibrio entre el gombo tierno y la espesa salsa de tomate especiada, un sello de la cocina casera marroquí.
