Ghoriba, a sweet staple in Moroccan homes, are the perfect accompaniment to an afternoon tea. Traditionally enjoyed during festive occasions and family gatherings, these cookies have evolved into an everyday treat. The almond variant brings a unique texture and flavor, setting it apart from other regional sweets. Cracked and pale, they beckon from trays during celebrations, yet are just as welcome with a quiet cup of mint tea.

The almond ghoriba's magic lies in its texture—a delicate, crisp exterior that yields to a chewy, fragrant center. The flavor is a gentle balance of nutty richness with a whisper of orange blossom, creating a harmonious bite. Each cookie is rolled in powdered sugar, its sweetness inviting yet restrained, making it a delightful end to any meal.

Ingredients

  • 300 gramosalmendras molidas
  • 150 gramosazúcar
  • 2claras de huevo
  • 1 cucharadaagua de azahar
  • azúcar glaspara rebozar

Method

  1. En un tazón grande, combina 300 gramos de almendras molidas y 150 gramos de azúcar. Revuelve hasta que el azúcar esté distribuido uniformemente entre las almendras. Esto asegura una dulzura consistente en cada bocado.
  2. Añade 2 claras de huevo a la mezcla de almendra y azúcar, seguido de 1 cucharada de agua de azahar. Usa una espátula o tus manos para mezclar todo hasta formar una masa cohesiva. La masa debe estar ligeramente pegajosa pero mantenerse bien unida. Deja reposar la mezcla durante 20 minutos para permitir que los sabores se mezclen y la textura se afirme ligeramente.
  3. Precalienta tu horno a 170°C y forra una bandeja para hornear con papel pergamino. Esto evita que las galletas se peguen y asegura un horneado uniforme.
  4. Después de que la masa haya reposado, toma pequeñas porciones y dales forma de bolas del tamaño de una nuez. Enrolla cada bola en azúcar glas, asegurándote de que estén bien cubiertas. Esto dará a las ghoriba su característica apariencia agrietada al hornearse.
  5. Coloca las bolas cubiertas de azúcar en la bandeja preparada, dejando espacio entre cada una para permitir que se expandan. Hornea en el horno precalentado hasta que las galletas estén apenas agrietadas en la parte superior y tengan un tono dorado pálido, indicando que están listas. Esto debería tomar unos 15-20 minutos, pero la señal visual es más importante que el tiempo.
  6. Retira las ghoriba del horno y déjalas enfriar en la bandeja durante unos minutos. Estarán blandas inicialmente pero se afirmarán al enfriarse.
