Walnut ghoriba offers a delightful twist on the classic Moroccan tea cookie, trading the usual almonds for the rich, earthy depth of walnuts. These cookies are a cherished treat during leisurely afternoons, often shared with friends over glasses of hot mint tea. Their cracked surfaces hint at the tender interior, inviting a closer look and a taste.

The flavor is a harmonious blend of buttery walnuts and a gentle kiss of cinnamon, balanced by the sweetness of sugar. The texture is both crisp and chewy, offering a satisfying contrast with each bite. Ingredients

  • 300 gramosnueces molidas
  • 150 gramosazúcar
  • 2claras de huevo
  • 1/2 cucharaditacanela

Method

  1. En un tazón grande, combina 300 gramos de nueces molidas y 150 gramos de azúcar. Revuelve hasta que el azúcar esté distribuido uniformemente entre las nueces. Esto asegura que cada galleta tenga una dulzura y sabor a nuez consistentes.
  2. Añade 2 claras de huevo a la mezcla de nueces y azúcar. Usa una espátula o cuchara de madera para mezclar hasta formar una masa pegajosa. Las claras de huevo actúan como aglutinante, uniendo la mezcla en una masa cohesiva.
  3. Espolvorea 1/2 cucharadita de canela en la masa y dóblala hasta que se incorpore uniformemente. La canela añade una nota cálida y aromática que complementa el rico sabor de las nueces.
  4. Cubre el tazón con papel film y deja reposar la masa durante unos 15 minutos. Esto permite que los sabores se mezclen y la masa se endurezca ligeramente, facilitando su manejo.
  5. Precalienta el horno a 180°C y forra una bandeja para hornear con papel pergamino. Mientras el horno se calienta, forma pequeñas bolas de masa, del tamaño de una nuez, usando tus manos.
  6. Rueda cada bola de masa en azúcar adicional para cubrir ligeramente el exterior. Este recubrimiento de azúcar creará una delicada y dulce corteza mientras las galletas se hornean.
  7. Coloca las bolas cubiertas de azúcar en la bandeja preparada, dejando espacio entre cada una para permitir que se expandan. Hornea en el horno precalentado hasta que las galletas estén ligeramente doradas y las partes superiores se hayan agrietado, unos 12-15 minutos. Las grietas indican que las galletas están perfectamente horneadas y tienen la textura clásica de ghriba.
