Ceviche de Pescado

Ceviche de Pescado is a staple in the coastal regions of Pacific Mexico, known for its fresh and vibrant flavors. It is a dish that brings the essence of the ocean to the table, combining the zest of lime with the freshness of sea bass or snapper. This home-style version is straightforward and generous, capturing the spirit of a family gathering.

The taste is a refreshing mix of citrusy lime, juicy tomatoes, and a hint of heat from serrano chiles, all balanced with creamy avocado and fragrant cilantro. Served on crispy tostadas, this ceviche is a celebration of simple, bold ingredients that highlight the natural flavors of the fish.

Ingredients

  • 900 g (2 lb)sea bass or snapper fillets — cut into small dice
  • 1 1/2 cupslime juice — about 15 limes
  • 4roma tomatoes — seeded and diced
  • 1white onion — finely chopped
  • 3serrano chiles — minced
  • 1 bunchfresh cilantro — chopped
  • 2avocados — sliced
  • 3 tbspolive oil
  • 12tostadas — to serve
  • 1 tspfine salt

Method

  1. Start by cutting 900 g (2 lb) of sea bass or snapper fillets into small, even cubes, about 1 cm (1/2 inch) in size. This ensures that the fish cooks evenly in the lime juice. Place the fish pieces in a large, non-reactive bowl, such as glass or ceramic, and keep them in the refrigerator to stay cold.
  2. Pour 1 1/2 cups of freshly squeezed lime juice over the fish cubes, ensuring they are fully submerged. Add 1 tsp of fine salt and gently stir to combine. Cover the bowl with plastic wrap and refrigerate. The fish is ready when it turns opaque and firm to the touch, which may take about 15-20 minutes depending on the thickness of the fish.
  3. While the fish is marinating, finely chop 3 serrano chiles, removing seeds if you prefer less heat. Roughly chop 1 bunch of fresh cilantro, including the tender stems, for added flavor. Add the chiles and cilantro to the bowl with the marinating fish, stirring gently to infuse the marinade with heat and aroma.
  4. Dice 4 roma tomatoes and 1 white onion into small, uniform pieces. These should be added just before serving to maintain their crisp texture. Set them aside until the fish is ready.
  5. Once the fish is fully marinated and opaque, drain off most of the lime juice, leaving just a little to keep the fish moist. Fold in the diced tomatoes and onion, mixing gently to avoid breaking the fish pieces.
  6. Peel and slice 2 avocados just before serving to prevent browning. Drizzle 3 tbsp of olive oil over the ceviche mixture, stirring gently to coat everything evenly.
  7. To serve, spoon the ceviche mixture onto 12 tostadas, ensuring each one has a generous amount of fish and vegetables. Top with slices of avocado, and serve immediately to enjoy the freshness and vibrant flavors.
