Tacos de Cabeza are a staple of northern Mexican cuisine, enjoyed for their rich, comforting flavors that summon the family to the table. Traditionally, this dish is made by slow-cooking beef head meat until it is tender and flavorful, a practice that echoes the resourcefulness and warmth of home cooking. It's a dish that transforms humble ingredients into a beloved meal, often shared during weekday dinners or casual gatherings.

The taste of Tacos de Cabeza is both robust and subtle, with the beef cheek meat melting in your mouth, accompanied by the brightness of fresh cilantro and the zing of lime. Each bite is enhanced by a drizzle of salsa roja de molcajete, which adds a smoky, spicy depth. Wrapped in warm corn tortillas, these tacos offer a satisfying blend of textures and flavors that celebrate simplicity and tradition in every mouthful.

Ingredients

  • 1.5 kg (3 lb)beef cheek and head meat — steamed until falling apart
  • 1white onion — quartered
  • 4 clovesgarlic
  • 2bay leaves
  • 1 tbspcoarse salt
  • 18corn tortillas — warmed on the comal
  • 1white onion — finely chopped, for the table
  • 1 bunchfresh cilantro — chopped
  • 2limes — cut into wedges
  • 1 cupsalsa roja de molcajete — to serve
  • 1 tspfine salt

Method

  1. Rinse the 1.5 kg (3 lb) beef cheek and head meat under cold water to remove any impurities. Place the meat in a large pot and cover it with water, about 5 cm (2 inches) above the meat. Add 1 white onion, quartered, 4 cloves of garlic, 2 bay leaves, and 1 tbsp coarse salt to the pot. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface, and let it cook gently until the meat is tender and easily pulls apart with a fork, which should take about 3 to 4 hours.
  2. Once the meat is tender, remove it from the pot and let it cool slightly on a cutting board. Discard the onion, garlic, and bay leaves from the broth. Using two forks or your hands, shred the meat finely, ensuring there are no large chunks. This will help the meat sit neatly in the tortillas.
  3. While the meat cools, finely chop 1 white onion and a bunch of fresh cilantro. Mix them together in a small bowl and set aside. This mixture will add a fresh, crunchy contrast to the rich meat filling.
  4. Heat a comal or a large dry skillet over medium heat. Place the corn tortillas on the comal, warming them for about 30 seconds on each side until they are soft and pliable. Wrap the warmed tortillas in a clean cloth to keep them warm and prevent them from drying out.
  5. To assemble the tacos, place a generous amount of the shredded meat onto each tortilla. Top with the onion and cilantro mixture, spreading it evenly over the meat.
  6. Cut 2 limes into wedges and serve them alongside the tacos, along with 1 cup of salsa roja de molcajete. Encourage everyone to dress their tacos with lime juice and salsa to taste, enhancing the flavors with a bright, tangy kick.
