Orejas are a beloved staple in the panaderías that dot the streets of Mexico, inviting passersby with their enticing aroma. The name, meaning 'ears' in Spanish, refers to their distinctive shape, a familiar sight in the bustling windows of these bakeries. While they are a daily delight enjoyed across the country, this home version captures the essence of those bakery-fresh flavors, bringing warmth and comfort to any table.

These pastries should be crisp and flaky, with each bite offering a satisfying crunch followed by the sweetness of sugar and a hint of cinnamon's warmth. Ingredients

  • 500 gramoshojaldre — frío
  • 200 gramosazúcar — para espolvorear
  • 1 cucharaditacanela molida
  • 1huevo — batido, para glasear

Method

  1. Comienza espolvoreando ligeramente tu superficie de trabajo con harina. Toma los 500 gramos de hojaldre y extiéndelo en un gran rectángulo, de aproximadamente 3 mm de grosor. Asegúrate de que el hojaldre tenga un grosor uniforme para permitir una cocción homogénea.
  2. En un bol pequeño, mezcla 200 gramos de azúcar con 1 cucharadita de canela molida. Espolvorea la mitad de esta mezcla de azúcar y canela uniformemente sobre toda la superficie del hojaldre extendido, presionando suavemente para que se adhiera.
  3. Dobla los lados largos del rectángulo hacia el centro para que se encuentren sin superponerse. Espolvorea el resto del azúcar con canela sobre el hojaldre doblado, presionando suavemente de nuevo.
  4. Dobla el hojaldre por la mitad a lo largo, alineando los bordes doblados juntos. Presiona suavemente para sellar. Usando un cuchillo afilado, corta el hojaldre doblado en rebanadas de aproximadamente 1 cm de ancho.
  5. Forra una bandeja para hornear con papel pergamino. Coloca las rebanadas en la bandeja, con el lado cortado hacia arriba, dejando unos 5 cm de espacio entre cada pieza para permitir que se expandan.
  6. En un bol pequeño, bate 1 huevo y úntalo ligeramente sobre la parte superior de las rebanadas de hojaldre. Esto les dará un hermoso color dorado al hornearse.
  7. Precalienta tu horno a 200°C. Hornea las orejas durante 12-15 minutos o hasta que estén infladas y doradas. Deben estar crujientes y caramelizadas en los bordes.
  8. Una vez horneadas, retira las orejas del horno y transfiérelas inmediatamente a una rejilla para que se enfríen ligeramente. Mientras aún estén calientes, puedes espolvorear un poco más de azúcar con canela encima si lo deseas, realzando su dulce aroma.
