Host an Italian night

Two tables: Sunday lasagne as the primo, and a Roman bowl of cacio e pepe.

An Italian house does not stack lasagne, risotto, and cacio e pepe as a pasta tasting. Each is a primo. Cook one. If you want tiramisù, it comes later as dolce, not as a side.

Risotto ai funghi is a third night if you still want the north.

Sunday lasagne

The primo of the house. No risotto. No cacio e pepe.

Lasagne alla Bolognese as the only pasta on a Sunday table.

Lasagne alla Bolognese is ragù, besciamella, and sheets. It arrives in the baking dish. A little antipasto can come first. A green salad can follow. Fruit or a small dolce if the table is still full.

Do not serve another pasta. Do not put risotto on the same cloth.

  1. Morning: ragù.
  2. Assemble and bake.
  3. Rest ten minutes; salad after the pasta.
