Host a Mexican night

Three tables: a mole afternoon, a pozole Sunday, and a taco night.

A Mexican house does not serve mole, pozole, and tacos as one tasting menu. Mole is the long celebration. Pozole is the weekend bowl you finish yourself. Pastor is street food brought home.

Tamales are another cloth entirely — unwrapped at the table with atole. Cook one free recipe, set the garnishes that belong to it, and stop there.

A wedding Saturday, or the long afternoon you actually have.

Mole night

Sauce over bird, sesame, rice, warm tortillas. Not tacos. Not pozole.

Mole poblano is the dish. Turkey or chicken sits under a thick sauce of dried chiles, seeds, spice, and a little chocolate. Scatter toasted sesame. Spoon Mexican rice beside it. Keep a cloth-wrapped stack of corn tortillas for scooping.

Beans can sit in a small cazuela. Do not fold the mole into tacos as the main idea. Do not open with pozole. Tea is not the close here — agua fresca or a simple beer is enough.

The clock

  1. Yesterday: toast and soak the chiles.
  2. Morning: blend and fry the paste; simmer until it coats a spoon.
  3. Afternoon: poach or roast the bird; warm rice and tortillas.
  4. At the table: cazuela, sesame, rice, tortillas — nothing else competing.

Pozole Sunday

A bowl of hominy you finish yourself. Cabbage, radish, lime, tostadas.

Pozole rojo is broth, nixtamalized corn, and pork or chicken. The garnish bar is part of the recipe: shredded cabbage, sliced radish, onion, dried oregano, chile, lime, avocado if you have it, and tostadas or chicharrón on the side.

Guests build their own bowl. This is not a first course for mole and it is not a taco topping. A cold beer or agua de jamaica is the drink.

The clock

  1. Morning: simmer the broth and hominy until the kernels bloom.
  2. Before lunch: shred the meat; slice the garnish bar.
  3. At the table: deep bowls, tostadas, lime — let people finish their own.

Taco night

Small tortillas, pineapple, onion, cilantro, salsa. The taco is the plate.

Al pastor is pork on a trompo, shaved onto a corn tortilla with a piece of pineapple. At home, a hot comal and a marinade of achiote and chile get you close. The plate is the taco in the hand.

Set salsa, lime, chopped onion, and cilantro. Do not add rice. Do not add a bowl of pozole. Do not pour mole over the meat. That is another night.

  1. Morning: marinate the pork in achiote and chile.
  2. Evening: hot comal; warm tortillas as you go.
  3. At the table: pineapple, onion, cilantro, salsa, lime.
