Two tables: ghormeh sabzi with tahdig, and a fesenjan night. Same rice logic. Different stew.

A Persian house does not put two khoresh on one sofreh as the mains. Tahdig is the bottom of the rice you already cooked. Herbs and yogurt belong to both nights.

Ghormeh sabzi night

Herb stew, chelow, tahdig, sabzi khordan. Not fesenjan.

Ghormeh sabzi is fenugreek, parsley, dried lime, beans, meat. Rice with a tahdig crust. Fresh herbs. Yogurt. That is dinner.

  1. Fry herbs.
  2. Simmer.
  3. Rice and tahdig. Herbs at the table.

Walnut and pomegranate stew, rice. The ghormeh is another week.

Fesenjan is dark, sweet-sour, often with poultry. Rice. Herbs. Do not also serve ghormeh as a second khoresh.

  1. Grind walnuts.
  2. Simmer with molasses.
  3. Rice.
