Two tables: an Adana grill, and a menemen breakfast.

A Turkish house does not serve kebap and menemen as one tasting. Lahmacun can be a lunch of its own, rolled with parsley and lemon. Baklava comes with tea.

Evening. Coals if you have them.

Adana night

Kebap, lavaş, grilled vegetables, ayran. No menemen. No baklava on the platter.

Hand-minced lamb on a wide skewer. Fire. Wrap in lavaş with grilled tomato, pepper, and sumac onion. Ayran.

Eggs are breakfast. Baklava is tea later.

  1. Mince and season.
  2. Grill.
  3. Bread, onion, ayran.

Pepper and tomato soften, eggs just set. Serve in the skillet. Bread. Tea from the çaydanlık.

Do not add Adana as a protein.
